Course Description:

In this course, Elizabeth Gallant, RD, LD, CNSC and Beth Quatrara, DNP, RN, CMSRN, ACNS-BC will review the main sources of protein, carbohydrate and fat used in enteral formulas; discuss novel ingredients added to enteral formulas; explain the benefits and limitations of enteral formula components for different patient populations; review common complications of enteral feeding; and more! Originally presented as a live webinar on October 25, 2023.

Ms. Elizabeth Gallant is a medical intensive care unit dietitian and nutrition support dietitian at the Cleveland Clinic in Ohio. She assists patients in intensive care who require parenteral, enteral, and oral nutrition support. She assists the total parenteral nutrition team in helping patients who are parenteral nutrition dependent. 

Ms. Gallant is a registered dietitian (RD) with the Commission of Dietetic Registration, licensed dietitian by the Ohio Board of Dietetics, and Certified Nutrition Support Clinician® (CNSC®) by the National Board of Nutrition Support Certification. She earned her Bachelor of Science degree in dietetics from The Ohio State University in Columbus. Ms. Gallant has been invited to speak about nutrition at numerous engagements and has published papers on nutrition support. She was a past chair of the parenteral committee and subcommittee lead of the malnutrition committee at the Cleveland Clinic.

Dr Beth A. Quatrara is an assistant professor and Doctor of Nursing practice (DNP) program director in the School of Nursing, Department of Acute and Specialty Care, at the University of Virginia in Charlottesville. As an assistant professor in the Master of Science in Nursing (MSN) and DNP programs, her teaching focuses on creating a learning environment where adult learners are engaged as active partners to facilitate lifelong learning. Her clinical research focuses on interprofessional teams and clinical practice as they relate to improvements in systems and patient outcomes. Her clinical practice focuses on improving the care of patients across the continuum of care and introducing hemorrhage control practices within the community setting. 

Dr Quatrara earned her MSN and DNP from the University of Virginia, School of Nursing, Charlottesville. She is board certified both as a medical surgical registered nurse (RN) and as a clinical nurse specialist, and she holds a certificate of training in adult malnutrition. She has a rich clinical background in acute and progressive care. She is a seasoned clinician with a practice portfolio that includes trauma, general surgery, surgical oncology, and digestive health. 

Dr Quatrara is the clinical representative to the Academy of Medical Surgical Nursing. She is also actively involved in efforts to advance interprofessional education and practice through grant-funded activities. Additionally, she has been published in a variety of journals on a myriad of clinical topics and has written chapters for a number of widely used advanced practice nursing textbooks. Dr Quatrara is a national-level speaker on topics including digestive health, nutrition, clinical research, and interprofessional education.

Kelly Tappenden, PhD, RD, FASPEN

Dr Kelly Tappenden is Dean of the College of Health, University of Utah, in Salt Lake City. She is also a professor in the Department of Nutrition and Integrative Physiology in the College of Health, University of Utah. She provides leadership and overall direction to the educational, research, and clinical initiatives of the College of Health. Additionally, she provides strategic vision and operational leadership to all aspects of the academic and scholarly programs, creating an environment and community that support the college’s faculty, staff, and students, with a focus on ensuring equity, increasing inclusion, and driving diversity. 

Dr Tappenden received her PhD in Nutrition and Metabolism from the University of Alberta, Edmonton, Canada. She completed her postdoctoral fellowship in physiology and pharmacology in the Department of Integrative Biology, University of Texas, Houston Health Sciences Center. Her career began as an assistant professor and continued through an endowed professor at the University of Illinois, Urbana, followed by professor and head of the Department of Kinesiology and Nutrition at the University of Illinois, Chicago. 

Dr Tappenden’s research program focuses on intestinal failure, mechanisms regulating epithelial function, and patient malnutrition. She has published more than 100 peer-reviewed papers and delivered more than 500 invited lectures. Currently, she serves as President of the Board of Trustees of the Oley Foundation, an advocacy group striving to enrich the lives of those living with home intravenous nutrition and tube feeding through education, advocacy, and networking.
